Tofu Patties

These tasty patties can be sandwiched into rolls with lettuce and sliced tomatoes or served on their own as a side dish for grain, potato, or pasta dishes.

Ingredients

2 eggs, beaten
1 pound soft tofu, drained well and finely crumbled
1/4 cup wheat germ
1 teaspoon salt-free herb-and-spice seasoning mix
Salt to taste
Light olive oil for frying

Preparation

  1. Step 1

    Combine the eggs, tofu, wheat germ, seasoning mix, and salt in a mixing bowl and stir together until well blended.

    Step 2

    Heat enough oil to coat a wide nonstick skillet or griddle. Ladle the tofu mixture onto the skillet in 1/4-cup portions and flatten. Cook the patties on both sides over medium heat until golden brown. Drain on paper towels.

    Step 3

    Serve warm or at room temperature.
