Ingredients

Hopelessly soggy celery
1 can broth, any variety
1/2 cup water
Vinaigrette

Preparation

  1. Poach the celery in the broth plus the water for 10 minutes. Drain. Split the stalks in half the long way. Cover them with vinaigrette. Chill in the refrigerator for at least 4 hours before serving.
