1 pound sweet potatoes (about 2 medium)
1 1/2 tablespoons vegetable oil
1/2 teaspoon ground cumin
1/4 cup minced scallion
1 teaspoon fresh lemon juice, or to taste

Preparation

    Peel sweet potatoes and quarter length-wise. In a food processor shred sweet potatoes.

    Step 2

    In a 12-inch non-stick skillet heat oil over moderately high heat until hot but not smoking and sauté sweet potatoes with cumin and salt and pepper to taste, stirring, until just tender, about 3 minutes. Stir in scallion and lemon juice.
