Peach Bellini Milkshake

Every time I visit Venice, Italy, one of my first stops is Cipriani for their signature Bellini cocktail, a wonderful mixture of fresh peach puree topped with cold sparkling Champagne. To make my milkshake version kid-friendly, just top it off with a splash of seltzer water.

    Makes one 16-ounce milkshake or two 8-ounce milkshakes

Ingredients

1/4 cup whole milk
1 cup coarsely chopped peeled very ripe fresh peaches or thawed frozen peaches
2 tablespoons sugar
10 ounces premium vanilla ice cream (about 1 2/3 packed cups)
Champagne or sparkling wine, chilled
Fresh peach slice, for garnish (optional)

Preparation

  1. Combine the milk, chopped peaches, and sugar in a blender and blend until coarsely pureed, about 5 seconds. Add the ice cream and blend until smooth, about 10 seconds. Pour into a 16-ounce glass, leaving 1 inch at the top. Top off with Champagne and garnish with a fresh peach slice, if desired. Serve immediately.
