Nieve, or "snow," is Mexico's sorbet, sold from carts throughout the country. Ours is a quick version, made with passion-fruit nectar instead of puréed and strained fruit. For the best flavor, look for a nectar that contains just water, passion-fruit juice, and sugar.

Ingredients

3 cups passion-fruit nectar (24 fl oz), chilled
2/3 cup light corn syrup
2 tablespoons fresh lime juice

Preparation

  1. Stir together all ingredients and freeze in ice cream maker. Transfer sorbet to an airtight container and put in freezer to harden, at least 1 hour.
