Oven-Roasted New Potatoes

Ingredients

3 pounds mixed small new potatoes, unpeeled
1/4 cup extra-virgin olive oil
1 1/2 teaspoons coarse salt
1/4 teaspoon freshly ground pepper

Preparation

  1. Preheat the oven to 350°F. Toss the potatoes with the oil, salt, and pepper in a large bowl until well coated. Transfer to a 9 × 13-inch metal baking dish and spread in a single layer. Roast, stirring occasionally, until tender, about 1 hour 15 minutes.
