Classic Daiquiri

The real thing, not the frozen kind, an elegant and delicious drink, especially when made with good aged dark rum.

Ingredients

3/4 cup rum
2 teaspoons Sugar Syrup (page 660) or superfine sugar to taste
1 tablespoon fresh lime juice, or to taste
Cracked ice as needed
2 lime wedges for garnish

Preparation

  1. Step 1

    Combine the first 4 ingredients in a cocktail shaker; shake well, then taste and add more sugar or lime if you like.

    Step 2

    Strain into a martini or cocktail glass and garnish with the lime.
