Chocolate-Banana-Avocado Pudding

Ingredients

1 avocado, flesh scooped from skin and cut into pieces
1 banana, peeled and cut into pieces
1/2 cup milk, plus more as needed (soy, almond, or coconut milk would also work well)
1/4 cup unsweetened cocoa powder
2 tablespoons honey or agave syrup
1 teaspoon lemon juice

Preparation

  1. Step 1

    Purée all the ingredients in a blender or food processor until smooth. Add more milk if necessary to adjust the texture. Transfer to a bowl, cover, and refrigerate until cold. Eat.

    Step 2

    Optional add-ins for stirring into the pudding just before eating: 1/4 cup grated coconut, sweetened or not, 1 to 2 tablespoons of nut butter, fresh berries, and, yes, even chocolate chips.
