Beans and Cheese

Parmesan and beans sounds an unlikely coupling but I recommend it. Pecorino, a young one, is a possibility here too, or one of the hard sheep’s cheeses British cheese makers are getting so good at.

green, purple, or yellow green beans or runners
butter
Parmesan

Preparation

    Trim the beans (I suggest a good handful per person), then boil them in deep, salted water or steam over boiling water.

    Step 2

    Have ready some almost-melted butter and some grated cheese. As you lift the beans from the water, toss them in the butter and cheese.
