Ingredients

1 (7-to 8-ounces) wheel ripe Brie or Camembert in a wooden box at room temperature
1 garlic clove
1 teaspoon pimentón (smoked paprika)
3 tablespoons unsalted butter, softened
36 thin diagonal slices from a baguette

Preparation

  1. Step 1

    Preheat oven to 350°F with rack in middle.

    Step 2

    Remove wrappings from cheese, then enclose cheese in box and bake on a baking sheet 20 minutes. Let stand while making toasts.

    Step 3

    Meanwhile, mince and mash garlic to a paste with 1/4 teaspoon salt, then stir together with pimentón and butter. Spread butter thinly onto bread and bake until just crisp, 10 to 15 minutes.

    Step 4

    Cut off top rind of cheese and serve cheese warm with toasts.
