Roasted Yams with Citrus Salsa

Ingredients

1 pound yams, scrubbed, cut into 1/3-inch-thick rounds
4 tablespoons olive oil, divided
Kosher salt and freshly ground black pepper
1/4 cup chopped fresh cilantro
3 tablespoons finely chopped shallot
2 tablespoons fresh orange juice
1 tablespoon fresh lime juice
1 teaspoon honey
1/4 cup unsalted, shelled raw natural pistachios, toasted, chopped
2 tablespoons golden raisins

Preparation

  1. Step 1

    Preheat oven to 425°. Line a rimmed baking sheet with foil. Place yams and 1 Tbsp. oil in a large bowl. Season with salt and pepper and toss to evenly coat. Arrange yams on prepared sheet in a single layer; roast until tender and lightly browned, about 25 minutes.

    Step 2

    Meanwhile, whisk remaining 3 Tbsp. oil, cilantro, shallot, orange juice, lime juice, and honey in a small bowl. Season salsa to taste with salt and pepper.

    Step 3

    Transfer yams to a platter. Drizzle salsa over and sprinkle with pistachios and raisins.
