Winter

Maple Pecan Tart

In this refined version, pecan pie is all grown up.

Roasted Fennel with Olives and Garlic

Roasting brings out fennel's sweet side.

Balsamic-Braised Cipolline Onions with Pomegranate

You'll find pomegranate seeds at markets and at specialty foods stores.

Smashed Rutabagas with Ginger-Roasted Pears

If you've never had rutabagas, here's a great way to try them. Ginger-roasted pears add sweetness and a touch of spice—the perfect balance for this earthy root vegetable. Slice one extra pear and roast it (with the cubes) to use as garnish.

Port-Roasted Chestnuts with Grapes

Chestnuts play deliciously against roasted grapes. Roasted chestnuts in jars can be found at some supermarkets, at specialty foods stores, and online at markys.com or mastercaviar.com.

Brussels Sprout Hash with Caramelized Shallots

Thinly sliced brussels sprouts are sautéed with shallots in this comforting hash.

Cranberry and Blood Orange Relish

Just three ingredients make a fresh and bright uncooked relish—and the colors are beautiful, too.

Cranberry Relish with Apple Cider

Boiling down the cider gives great apple flavor; parsley adds color and freshness.

Cranberry Sauce with Port and Cinnamon

Dried and fresh cranberries are simmered in Port for a not-too-sweet, grown-up take on the classic.

Roasted Brussels Sprouts

Deep-fried Brussels sprouts are a popular side dish at Ssäm Bar. Cooked in a hot oven (easier for the home cook), they still get that nutty sweetness and nicely browned crisp exterior. Rice Krispies, standing in for Indian puffed rice (which is more difficult to find), add crunch, while sous-chef Tien Ho's Vietnamese-style dressing lends the sprouts an offbeat complexity.

Winter Caprese Salad

Editor's note: The recipe and introductory text below are adapted from Molto Italiano by Mario Batali. It's part of a special menu created by Lidia Bastianich and Mario Batali for Epicurious's Wine.Dine.Donate program. Insalata Caprese Invernale I love this winter version of the Neapolitan classic because it is very easy to do, and the slow-roasted tomatoes are better than any regular tomatoes for all but about three months of the year. The extra pesto keeps well in the fridge for two weeks, provided you cover the top with a half-inch of extra-virgin olive oil.

Kabocha Squash Cake with Brown Sugar Cream

These little cakes from Will Goldfarb have lots of fall flavor thanks to kabocha, a round Japanese winter squash. Make the cream a day ahead.

Meyer Lemon Cream Pies

A Meyer lemon is a cross between a lemon and a mandarin orange. If you can't find any, substitute regular lemons. This pie's decadent cream filling is made from protein-rich tofu.

Roasted Ruby Beets

This recipe was created by chef Geraldine Ferraro of the Four Swallows Restaurant on Bainbridge Island in Washington. It's part of a special menu she created for Epicurious's Wine.Dine.Donate program.

Cape Brandy Tart with Brandy Sauce

Editor's note: The recipe and introductory text below are from Dinner After Dark: Sexy, Sumptuous Supper Soirées by Colin Cowie. For more about Cowie, click here. I can't remember a Christmas back at home when we didn't sit around the family table and enjoy my sister Anne's wonderful tart at the end of the meal. It's heartwarming and incredibly convenient: It can be made days in advance and frozen, with no effect on the delicious result. For Christmastime, add 1/2 cup glacéed cherries to the batter; these holiday treats are the red and green cherries, preserved in jars.

Tangerine-Ginger Caipirinhas

The Caipirinha is Brazil's most popular cocktail. The drink is traditionally made with limes, but Amber uses tangerines instead.
