Garlic Vinaigrette

Ingredients

1 garlic clove, lightly crushed with the flat side of a knife
1 tablespoon Dijon mustard
2 tablespoons red-wine vinegar
2 tablespoons fresh lemon juice
Coarse salt and freshly ground pepper
3/4 cup olive oil

Preparation

  1. Put the garlic, mustard, vinegar, and lemon juice in a small bowl; season with salt and pepper; whisk until blended. Whisking constantly, pour in the oil in a slow, steady stream until emulsified. Let stand at least 30 minutes; discard the garlic.
