Cookie Sheet S’Mores

These just might be the first s’mores you’ll ever eat that don’t come dipped in ashes. And it takes only eight marshmallows to make eight s’mores because none are sacrificed in the fire. A quick dip in bottled smoke and a sprinkling of Cheater Smoked Sweet Salt are the other secrets to bringing adult sophistication to this kiddie camp classic. Mix and match cookies and graham crackers with different chocolates and candy bars. The marshmallows will burn in the oven, so watch them carefully and don’t leave your post. Cookie Sheet S’mores don’t need to be served hot. We were surprised at a winter birthday barbecue for Min’s daughter, Elsa, when we laid out a platter and guests of all ages kept sneaking just one more s’more until they were gone. Use a variety of smallish store-bought cookies so everyone can try different combinations.

Ingredients

8 flat cookies such as peanut butter, chocolate, gingersnaps, or sugar
2 milk or dark chocolate bars,
1 1/2 to 2 ounces each
Bottled smoke 8 marshmallows
Cheater Smoked Sweet Salt (page 49)

Preparation

  1. Step 1

    HEAT the oven to 450°F.

    Step 2

    PLACE the cookies on a baking sheet. Top each with a piece of chocolate.

    Step 3

    BAKE for 1 minute or so to soften the chocolate. Remove from the oven.

    Step 4

    POUR a small amount of bottled smoke into a small dish. Dip each marshmallow lightly in the bottled smoke. Place one marshmallow on its side on the chocolate.

    Step 5

    BAKE in the 450°F oven or broil 6 to 8 inches from the heat source for 3 to 4 minutes, until the marshmallows are lightly browned and puffed.

    Step 6

    REMOVE from the oven and sprinkle each cookie with the sweet salt while the marshmallows are hot.

    Step 7

    SERVE immediately while hot or later at room temperature. You can also rewarm the cookies in the oven briefly to soften the marshmallow. Again, watch them carefully and don’t leave them unattended, as they burn easily.

  2. Peanut Butter S’Mores

    Step 8

    Start with chocolate or peanut butter cookies. Replace the chocolate with a peanut butter cup or place a dollop of peanut butter on top of the softened chocolate before adding the marshmallow.

  3. Coconut S’Mores

    Step 9

    Start with chocolate cookies and place a generous pinch of shredded coconut on top of the softened chocolate before adding the marshmallow.

  4. Peppermint S’Mores

    Step 10

    Start with chocolate cookies and replace the chocolate bars with Peppermint Patties.
