Broiled Shrimp Scampi

SMART SUBSTITUTION Heart-healthy olive oil replaces butter in this garlicky scampi. Just a drizzle of oil is enough for broiling, rather than sautéing, the shrimp.

Recipe information

  • Yield

    serves 4

Ingredients

1 1/2 pounds large shrimp, peeled and deveined, tails left on, patted dry
1 tablespoon olive oil
2 garlic cloves, minced
Coarse salt and ground pepper
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh flat-leaf parsley
Lemon wedges, for serving

Preparation

  1. Step 1

    Step 2

Broil until shrimp are opaque throughout, 3 to 4 minutes. Sprinkle with lemon juice and parsley; toss to combine. Serve immediately with lemon wedges.
