Ingredients

2 cups plus 12 tablespoons whipping cream
1 2/3 cups sugar
1/2 cup (1 stick) unsalted butter

Preparation

  1. Combine 1 cup plus 6 tablespoons cream, sugar and butter in heavy large saucepan. Boil over medium-high heat until mixture thickens slightly and is deep golden, stirring constantly, about 10 minutes. Remove from heat; cool 5 minutes. Gradually whisk in 1 cup plus 6 tablespoons cream (mixture will bubble vigorously). Stir over low heat until mixture is smooth. (Can be made 1 day ahead. Chill. Rewarm over low heat until lukewarm, before using.
