Red Leaf Salad with OrangesTierney Gearon

Orange slices add a juicy, sweet touch to this simple salad, which is made even easier by drizzling the lettuce with oil and vinegar (rather than making a proper vinaigrette).

Recipe information

  • Yield

    Makes 4 servings

Ingredients

2 oranges
1 head of red leaf lettuce, coarsely chopped
1/2 medium red onion, thinly sliced (about 1 1/4 cups)
1 1/2 tablespoons olive oil
1 1/2 tablespoons balsamic vinegar

Preparation

  1. Using small sharp knife, cut off peel and white pith from oranges. Cut oranges crosswise into round slices, then cut slices in half. Toss red leaf lettuce, orange slices, and red onion slices in large bowl. Add oil and vinegar and toss to coat; season salad to taste with salt and pepper.
