Pineapple and rum add rich, sunny flavor to this take on a frozen daiquiri. It's the perfect cocktail for a hot day.

Ingredients

⅓ cup rum, or to taste
1½ cups 1-inch pineapple chunks
2 tablespoons superfine sugar, or to taste
2 teaspoons fresh lime juice, or to taste
3 fresh mint leaves
2 cups ice cubes
Garnish: mint sprigs and/or pineapple chunks skewered with wooden picks

Preparation

  1. In a blender blend all ingredients until smooth but still thick. Divide mixture between 2 large stemmed glasses and garnish with mint and/or pineapple.
