3 pounds small red new potatoes
1/4 cup extra-virgin olive oil
2 teaspoons finely grated lemon zest
Coarse salt and ground pepper

Preparation

    Place a steamer basket in a large saucepan with 2 inches simmering water. Add potatoes; cover and cook until easily pierced with the tip of a paring knife, about 25 minutes.

    Step 2

    Lightly smash potatoes, toss with oil and lemon zest, and season with salt and pepper. Serve warm.
