    Roasting intensifies the sweetness of the rutabaga. Peel and cut your roots into cubes, put them in a roasting pan with a thick slice of butter and some salt and black pepper, then cover with a piece of wax paper. Roast for twenty minutes or until the rutabaga has softened but not browned.

    Step 2

    Remove from the oven and mash with a potato masher, incorporating more butter and black pepper as you need it.
