Lamb Burgers in Pita with Yogurt Sauce

Called tzatziki in Greece, this yogurt sauce can also be used on a baked potato as a nonfat alternative to sour cream. To prevent the pita bread in this recipe from getting soggy, place the trimmed portion of the bread down into the pocket to act as a sponge for the lamb drippings and yogurt.

Grilled Charmoula Lamb Chops

We ordered our lamb chops ahead to allow time for the butcher to french them to the eye (to trim them of all fat and scrape the rib bone clean). This not only makes for a nice presentation but also makes it much easier for guests to pick them up. Our chops, purchased from a fancy Manhattan butcher, cost $400 and were by far the most expensive part of this wedding menu. Sounds like a lot, we know, but just think what a caterer would charge. Charmoula is a fragrant, spicy Moroccan marinade and sauce often used with fish and seafood.

Grilled Cumin-Lamb Pitas with Couscous and Yogurt

The manly art of grilling reached its first peak in this decade, as dads stood by their Webers, stoking the fire and pulling dinner from its clutches while moms did the shopping and cleanup. Besides burgers and wienies, people loved to make shish kebab. Today, grilling knows no gender, and skewers remain a handy way to prepare small foods. Experience has taught us that the vegetables are best cooked separately, or not at all—as this hot-cold, tender-crunchy wonder of a sandwich illustrates.

Lamb Tikka with Crispy Onions

A cucumber and red bell pepper relish and a pilaf made with fragrant rice (like basmati) are perfect partners for the lamb. For dessert, have coconut ice cream topped with sliced bananas. Can be prepared in 45 minutes or less.

Rack of Lamb with Port and Black Olive Sauce

Offer this elegant dish with a sauté of vegetables.

Osso Buco of Lamb Shanks with Zucchini and Avgolemono

For this osso buco we've substituted lamb shanks for the more traditional veal. We've also borrowed from the Greeks, adding avgolemono, a bright-tasting sauce of eggs, lemon juice, and broth.

Lamb with Artichokes and Sun-Dried Tomatoes

This Mediterranean-style treatment of lamb shanks is delicious over orzo.

Leftover Lamb Casserole

I'm not sure if it was the casserole I disliked or the repetition of eating it many times in one week. By the third night, the whole family complained, to which my mother, Ruth, responded in amazement, "But it's from the James Beard cookbook!" To me, at 12 years old, that only meant I didn't like James Beard, whoever he was. — Nancy Hawley

Moroccan Lamb Stew

This fragrant stew is great over couscous.

Lamb Shanks with Tomatoes and Fresh Herbs

This is similar to the classic veal osso buco. Capocollo or pancetta (available at Italian delis) adds a nice smokiness. Serve this over noodles, mashed potatoes, or polenta. Market tip: Small lamb shanks won't do — they're mainly bone — so get the largest, meatiest ones you can find (about 1 to 1 1/4 pounds each).
