Goat Cheese
Goat Cheese and Asparagus Pizza
A lovely start to this spring supper would be mugs of green pea soup sprinkled with chives. Accompany the pizza with an arugula, radicchio and endive salad dressed with balsamic vinaigrette. Offer gelato for dessert.
Goat Cheese and Sun-Dried Tomato Tartines
Chef Laurent Manrique is a big fan of Laura Chenel goat cheese in Sonoma, which is available at many cheese shops across the country.
Roasted Asparagus with Goat Cheese and Bacon
Serve Champagne to add an elegant, light touch to this terrific brunch menu.
Pizza Bianca with Goat Cheese and Greens
Allow about 5 1/2 hours for the pizza dough to rise. The small quantity of yeast and a long, slow rise give the crust its great flavor and texture.
Goat Cheese Salad with Pancetta, Dried Cherry and Port Dressing
Gay Koenemann of Bonn, Germany, had dinner at 300 East Boulevard on a recent trip to Charlotte, North Carolina. There he was treated to the most exquisite salad he'd ever had. Although the restaurant calls it Fall Salad on the menu, it's enjoyable year-round.
Dried cranberries would make a good alternative to the dried cherries.
Crisp Cheese-Filled Eggplant Sandwiches with Pomegranate Molasses
Pomegranate molasses is sold at Middle Eastern markets and some supermarkets; panko is in many supermarkets' Asian foods aisle.
Poached Chicken Breast Stuffed with Goat Cheese and Spinach
This is a recipe that I cook at home myself — a versatile method for having a sophisticated meal on tap with very little last-minute prep work. This is a remarkable dish because it requires nothing but a pot of simmering water to cook it successfully; there is no butter, no oil, no sautéing, and no roasting. Yet the results are delicious. Here I've stuffed the chicken with goat cheese and spinach, but you can substitute Chopped Roasted Tomatoes ( this recipe can be found in the book), or any filling you like.
Avoid buying boneless, skinless chicken breast pieces if poissible. You'll get the best results by purchasing a whole organic chicken and removing the breast yourself.
Serve this with a small salad for an ideal lunch.
Beet and Goat Cheese Salad with Pistachios

Sorrel-Wrapped Goat Cheese and Beet Stacks
If you can't get sorrel at your local market, arugula leaves or large basil leaves are a good alternative.
Warm Goat Cheese Salad with Grilled Olive Bread
The goat cheese must be coated and refrigerated at least one hour (and up to eight hours) before cooking.
Pasta with Tomatoes and Goat Cheese
The goat cheese, when tossed with the hot pasta, melts and becomes a creamy sauce. We've learned that it's a good idea to taste your goat cheese before using it (or before buying it, if possible — one of the soft goat cheeses we tried seemed a bit too strong for this dish).
Date, Goat Cheese and Mesclun Salad
Can be prepared in 45 minutes or less.
Goat Cheese with Bell Pepper Dressing
This is very easy to prepare and it makes an elegant addition to any party.
Pesto and Cheese-Filled Chicken Breasts
Garden-fresh Thyme Pesto is the star of this elegant entrée, but you can also use purchased or homemade basil pesto.
