Strawberry-Rhubarb Mochi
Mochi are sweet, filled Japanese dumplings that are served chilled. I’ve been fascinated by them from the first time I had one, but I’d always been told that they could be made only in factories. And since the commercial ones are artificially flavored and colored and filled with ice-hard ice cream, that didn’t surprise me. One day, I promised my friend David Chang of Momofuku that I’ d make fresh mochi for him. It became a mission. Once I learned how to do it, I found that it really wasn’t difficult at all to make the tender, sweet rice dough and flavor it naturally. And since I fill mochi with a compote, they’re fork-tender. The basil fluid gel is an ideal herbal foil to the compote. I use 2-inch demisphere molds when I make mochi, but I’ve found that an egg carton works fine. The secret to the dough is working quickly. This recipe makes twice as much as you need for the fourplay, but I hardly consider leftover mochi a problem. The mochi will keep for 1 day in the refrigerator.
Citrus Biscotti
Biscotti means “twice baked,” a cooking method that results in the firm, crunchy cookies that have recently become wildly popular here in America. These cookies were eaten by sailors back in Columbus’s day because they last for a long time without going bad. They’re great for dunking in coffee or tea, which is how my mom, nonna, and I would eat them when I was growing up. The citrus zests provide an extra little zing, and really evoke the tastes of Italy. If you want, you could use just orange or lemon; it doesn’t have to be both.
Almond Cake
Il Fornaio bakery in Los Angeles made a recipe for almond cake that I fell in love with many years ago. I’ve changed their recipe a bit to create a different texture, but the pronounced almond flavor remains the same. It’s very important to cream the butter and almond paste until it becomes thoroughly smooth.
Basic Polenta
This is the most basic, fundamental version of polenta. It’s the perfect side to accompany a delicious, long-simmered stew. Or you can serve this basic recipe topped with your favorite sauce; I’m partial to bolognese.
Cornmeal and Rosemary Cake with Balsamic Syrup
Imagine the best corn muffin you’ve ever tasted, but richer and sweeter. The rosemary adds a subtle flavor and aroma that is reminiscent of the holidays. Pound cakes are perennially popular because they are such good keepers; this one will keep in the freezer for up to six months if it’s tightly wrapped. Pull it out and dress it up or dress it down; it’s great either way.

This is a moist, fragrant cake with a soft, strong crumb. Its flavors hold up well with chocolate. Use it with Cocoa Chantilly Cream (page 117) for subtle chocolate flavor, or use Sugar Islands Chocolate Buttercream (page 119) for the big bang of chocolate and vanilla together.
Tropical Tree Banana Nut Muffins
Banana leaves gracefully cover cocoa beans in their fermenting bins where the beans develop their extraordinary flavor. Roadside farm stands in chocolate’s growing regions offer a jumble of bananas, cinnamon sticks, plantains, cacao pods, walnuts, vanilla beans, and coconuts, all from trees of the tropics. For that extra earth-friendly touch, use muffin or cupcake liners made with unbleached, eco-friendly paper.
New World Pumpkin Spice Cake with Chocolate Glaze
This moist cake combines the fruits, nuts, and spices from the New World that the Spanish conquistadores discovered in 1508. Chocolate was part of this Mesoamerican tableau. Brown sugar and ginger arrived much later, but this cake pays homage to the riches of the original jungles and river valleys.
