  1. Difficult to peel

    Step 1

    Here are five things to try: If the peel is slightly loose, run hot water over the garlic and the peel should come off readily. Cut off the root end of the garlic cloves (the flattish end at the bottom of the bulb). Mash them with the side of a big kitchen knife. The peel should be easy to separate from the clove. If you need whole cloves and you’ve got a little time, drop the garlic into boiling water for 5 seconds, then drop it into cold water. The peel should now come off easily. Microwave the cloves on high for 10 to 20 seconds, then rub gently.

  2. Need some, have none

    Step 2

    You can substitute garlic powder, though it will have a slightly different taste. Taste as you go, but plan on about 1/2 teaspoon per clove.
