Three-Mushroom Dressing

Pennsylvania is now a national center for cultivated exotic or "specialty" mushrooms like shiitake and crimini, but early colonists found plenty of familiar wild mushrooms growing free for the picking in the forests of their new world. The tradition finds expression in this mushroom-lover's dressing, which blends both wild and cultivated fungi for maximum flavor.

Wild Rice with Wild Mushrooms

One surprise to Europeans who settled the plains was the abundance of wild mushrooms, including morels, chanterelles, and other varieties familiar from home. Free for the picking, the mushrooms were hung on strings and dried, providing a winter's worth of eating. Wild rice (actually a grass seed) is a New World native that combines well with the earthy mushrooms the French cèpes. (The Italians call them porcini, and they are easier to find than cèpes, which is why we call for porcini in this recipe.)

Use fresh button mushrooms if wild mushrooms are hard to get; you will still have delicious results. Yukon Gold potatoes have a pale yellow color and a buttery taste that adds to the richness of this dish.

Smoky Sage and Giblet Gravy

Since the broth and giblets can be prepared one day ahead, the last-minute steps are kept to a minimum.

Mushroom Stock

We make this rich, intensely flavored stock for our mushroom soups, sauces, and ragouts. The dried shiitake mushrooms give the stock depth and tremendous flavor. They're readily available in the Asian section of most grocery stores, but if you can't find them, substitute another variety of dried mushrooms — fresh mushrooms alone will make a weak stock. This stock freezes well.

After renovating the building, he reopened it as a European-style hotel and restaurant. Schumachers' is now on the National Register of Historic Places. John's wife, Kathleen, runs the front of the popular restaurant, and John is the chef. His specialties are central European fare — like this veal sauté.
